Happy August! Phil and I recently went on a mini family vacation to Deltaville Virginia, and had an absolute blast! We hadn't seen his family all summer, so it was the perfect weekend celebrating birthdays and spending time with one another. I have family in Richmond, but really hadn't seen that part of the state before. The area is gorgeous, I don't think we could have had better weather. The days were spent by the water, swimming, sailing, or jet skiing, and I managed to dodge the nettles haha. In the evenings, we cooked delicious food and played games with one another. It could not have been a better weekend relaxing and falling in love with my husband's favorite place!
Since being back, we've been putting our Trader Joe's frozen food section to good use. We didn't really have time to cook big meals with work schedules, so we've been using up things in our fridge and freezer. Last night I decided to get creative and make a "Summer Gnocchi", which ended up being delicious. I couldn't wait to share it!
Trader Joe's has cauliflower gnocchi that I love, but it may not be for everyone so, you could substitute regular gnocchi or pasta. If you go with the cauliflower gnocchi, follow the "in the pan instructions"; a little bit of water and then sauteed with butter at the end after the water is absorbed. I added in broccoli and cherry tomatoes, which were just roasted with olive oil and salt/pepper. I had some avocados that needed to be used up and found a recipe on this blog, Kirbie's Cravings. It makes a good bit that I'll even be able to use it as a salad dressing this week.
Of course, I have to garnish the dish with cheese! This is just a cheddar blend I had from Trader Joes, but you could use goat or Parmesan as your topping. I ate some left over chicken we had cooked over the weekend, and paired it with a rose. White wine could also be delicious with this meal!
2 cups Broccoli
1 cup Chopped Cherry Tomatoes
2 tbsp Olive Oil
1 clove Garlic (Minced)
Salt/Pepper to Taste
1-2 cups Cauliflower Gnocchi (Or pasta of choice )
2 tbsp White Cheddar Cheese
2 tbsp Avocado Sauce (Recipe Link in Comments)
Preheat oven to 400 degrees
Chop broccoli and tomatoes, cover in olive oil and salt/pepper. Add in garlic and roast for 20 minutes in oven.
Cook gnocchi like "pan fry" instructions on packaging. Or cook desired pasta/rice.

Once everything is cooked, mix your ingredients into your favorite pasta bowl and enjoy!
One thing Phil and I have really worked hard this year is to not let our hectic schedules get in the way of cooking together, and this dish allows us to do just that. I use to think that frozen items were frustrating to cook with or sometimes not enough food, but I have really started to rely on them more and more this past year. Sometimes more is in our freezer than our refrigerator haha. Just by staying stocked up, we always have something on hand and this helps to prevent us from eating out during the week. I promise if you just find a few things left over in your fridge or freezer, you can throw together something like a gourmet dish you would find in a restaurant.
